Stewed pork with milk
BackDESCRIPTION OF THE DISH
Pork roast in milk is a juicy home-cooked meal for family holidays or weekends when the whole family gathers at the dinner table.
Inviting full-flavoured pork in milk sauce appeals to both adult and young gourmets because the meat retains all its useful properties and comes out extremely juicy thanks to stewing. The steam produced inside the casserole while braising the dish in the milk penetrates deep into the fibres of the meat, making it incredibly soft and tender.
The milk adds a subtle creamy taste to the meat, and the spicy herbs finish the dish perfectly.
Pork in milk is calorie-rich enough to satiate the body, and goes well with a whole bunch of products: Brussels sprouts, grilled vegetables, stewed courgette, and green peas.
Make roast pork in milk this weekend: this splendid meat dish will definitely take its honoured place on the family table!
Delicate pork in milk — a taste of childhood

Ingredients
Pork loin | 1.5 kg |
Khutorok Selianskyi Butter by RudTM, 73.0% | 1 tbsp |
Sunflower oil | 3 tbsp |
Garlic | 5-7 cloves |
Milk by RudTM, 2.6% | 4 glasses |
Carrot | 1 |
Onion | 1 |
Salt | to taste |
Ground black pepper | to taste |
Bay leaf | 2 pcs |
Rosemary | 2 twigs |
Cooking
Step 1
Rinse the pork thoroughly under cold water and tie it with kitchen cord so that the meat does not lose its shape during stewing.
Step 2
Peel and slice the garlic. Using a sharp knife, make small cuts in different parts of the piece of meat to stuff the meat with the garlic. It is best to do this 2-3 hours before cooking or leave it overnight. In this case, the meat will absorb the aroma of garlic and marinate well.
Step 3
Rub the pork loin with salt and pepper to taste. Preheat the oven to 160-180 °C.
Step 4
Melt the butter in a deep casserole, add the oil and fry the pork on all sides until golden.
Step 5
Peel the onions and carrots, rinse and cut in half. Add vegetables to the casserole along with bay leaf and rosemary twigs. The greens will give the dish a rich spicy aroma.
Step 6
Add four glasses of milk to the vegetables and bring to a boil on the stove. While cooking, the milk will resemble soured milk, there is no need to panic — it should be like that.
Step 7
Cover the roast with the lid and keep in the oven for 2 hours until cooked. Remember to turn the meat over at least once so that the pork is stewed properly.
Step 8
Remove the pork from the pan and wrap it in foil to keep the meat hot and juicy.
Step 9
Remove the herbs, carrots and onions from the broth. Keep the remaining broth on the stove until its volume is reduced to 300 mL. After that, blend the broth with a blender.
There is no need to be disappointed in case the sauce is too thin. Fried flour, a thickener or corn starch will set things right. Dissolve one of the ingredients in water and pour into the boiling sauce while stirring. Add your favourite spices.
Step 10
Remove the cord from the cooked meat, cut into thin slices. Put the pork on a warm plate, add the spicy milk sauce. Sprinkle the dish with dill or parsley generously.
Serve at the table and enjoy unparalleled taste!
