Cream Soup with Green Peas and Cream

As they say in France, ‘a lunch without soup is like a house without a front door’. Delicate cream soup of green peas and cream is a classic dish of the French cuisine.
Rich, thick, nutritious and easily digestible. And it is very simple to make it: mix boiled green peas with butter, bled cream and spices until smooth, then combine with the broth.
This fragrant spring-time green soup tastes spicy sweet and looks incredibly appetising: as if just from a French restaurant. And if you add slices of bacon or a piece of juicy chicken, you will get a rich and hearty home-made dish for every day.
Light Cream Soup with Green Peas, Cream, and Mint
Basil and mint give the soup a rich spicy aroma and refreshing taste. A pinch of sugar keeps the colour of the peas bright, not allowing it to darken in the process of cooking. And cream and butter will give the dish new flavours and a special delicate texture. Cream soup tastes best with croutons, pumpkin seeds or crackers.

Broth | 700 ml |
Mint | 3 springs |
Parsley | 3 springs |
Khutorok Selianskyi Butter by RudTM | 30 g |
Cream, 20 % | 100 ml |
Sugar | 1 ts |
Salt | to taste |
Slices of bacon | optionally |
Steps to Make it
Step 1
Chop the onions finely and put them in a saucepan. Add a stick of butter and simmer on low heat for five minutes.
Step 2
Chop parsley and mint, put in a saucepan together with green peas. Add a teaspoon of sugar and a pinch of salt. Pour cold water until it barely covers the contents of the pan. Bring to a boil and cook for 15 minutes.
Step 3
Pour the broth into a separate pot. Grind peas with a blender to a purée.
Step 4
Add cream and half of the broth, mix thoroughly. Bring to a boil and cook for a maximum of five minutes. If necessary, use the entire broth.
Step 5
Fry the bacon slices until golden.
Pour the soup into bowls, serve with bacon or a sprig of mint.
