Broccoli Quiche Lorraine
BackDESCRIPTION OF THE DISH
A thin layer of golden dough and a lot of juicy filling: that is what a broccoli quiche lorraine is. Fragrant and easy to make, this French cake is equally good both warm and chilled.
Yeast-based flaky dough by Rud™ makes it easy to cook this dish. And the filling of broccoli curds looking like small green trees makes the dish both beautiful and good for health: 100 grams of broccoli contain a large amount of vitamins and only 30 kcal.
Properly prepared broccoli — slightly grilled over a high heat or blanched — will have a stiff structure inside and a sweet nutty flavour. Melted cheese and egg melange with spices will add to a more exciting and complex flavour, making the texture of the dressing creamier and preventing it from leaking away.
Broccoli and Cheese Quiche Lorraine
Before adding the filling, bake the pie crust for about 15 min in the oven. This will let the dough bake well with a large amount of liquid dressing.
Ingredients
Yeast-based flaky dough by Rud™ | 500 g |
Frozen broccoli by Rud™ | 250 g |
Cream | 200 ml |
Milk by Rud™ | 100 ml |
Eggs | 2 |
Cheese | 70 g |
Salt | to taste |
Pepper | to taste |
Powdered garlic | to taste |
COOKING
Step #1
Thaw the yeast-based flaky dough by Rud™ and place it on the baking paper. Place the baking paper with the dough in the mould 26-28 cm in diameter. Press the dough round the edges firmly and prick it.
Use scissors to trim any dough hanging over the edge.
Step #2
Boil the broccoli for four minutes. Do not put the lid on for the broccoli to retain its bright green colour. Place the broccoli into a strainer and let the water drip out.
Step #3
Prepare the dressing. Whisk cream, milk, eggs, salt and spices. Add grated cheese and mix well.
Step #4
Pour the dressing into the form with the dough. Put the broccoli on top. Add some feta cheese if you wish.
The filling will rise as the pie bakes, so ensure there is at least a 1.5 cm distance between the dressing and the edges of the pie crust.
Step #5
Heat the oven to 180 °C and bake the pie for 40 minutes.
A fragrant Broccoli and Cheese Quiche Lorraine is ready. Take it out of the oven and serve warm!
